Mum’s Power Breakfast

As a new mum I have found my energy levels lagging, all to often by 10am I’m grabbing a chocolate bar or fizzy drink – not exactly the best breakfast!! This week however I decided it was time to change! I planned ahead and made a delicious breakfast that fills me up and can easily be stored in the fridge! Granola in a Jar!

Ingredients
Porridge oats
Sunflower seeds
Pumpkin seeds
Linseed
Almond flakes
Blueberries ( or alternative fruit)
Low fat natural yoghurt
Honey
Olive oil

Mix all the dry ingredients in a bowl. In separate bowl mix honey and oil. Combine with dry ingredients. Place on baking sheet and toast oats and seeds. Take your jar and layer the oats and seeds, yoghurt, fruit and honey. When jar is filled place lid on and store in the fridge! I make 2-3 days worth in a batch! Full of goodness and fills you up! Simply take out of fridge and eat!

Need a choco fix? Add Chico chips into the mix for a yummy desert!!
